Coffee Cherry

The fruit of the coffee plant, typically containing two coffee beans nestled inside each cherry. These cherries undergo a complex process of harvesting, pulping, fermenting, and drying before the beans are extracted and roasted to produce coffee.

Unroasted Coffee

Green coffee beans are the raw, unroasted seeds of the coffee plant inside of the cherries. They undergo processing that includes harvesting, milling, and drying before they are ready for roasting. One interesting fact about green coffee beans is that they contain a higher concentration of chlorogenic acids compared to roasted beans. These compounds are believed to have antioxidant properties.

Roasted Coffee

The roasting process not only develops the beans' flavor and aroma but also reduces their chlorogenic acid content. This reduction occurs as the beans undergo chemical changes during roasting, resulting in the familiar dark color and characteristic flavor profiles that vary depending on the roast level.

Caffeine Levels

Roasting coffee beans not only enhances their flavor and aroma but also affects their caffeine content. Contrary to popular belief, darker roasts typically have slightly less caffeine than lighter roasts. This is because the longer roasting process breaks down caffeine molecules. Therefore, lighter roasts generally retain more caffeine compared to their darker counterparts.
